Iced Orange Coffee

2 1/2 cups strong coffee
1 small orange
cream and sugar
ground cinnamon
oranges slices for garnish (optional)

Brew the coffee.

Using a vegetable peeler, remove the zest from the orange in strips. Put the strips in the hot coffee. Set aside for 1 hour to cool to room temperature. Strain the coffee. Squeeze the orange and add the juice to the coffee. Serve over ice with cream and sugar, as desired. Sprinkle the top of each serving with a pinch of cinnamon and garnish with an orange slice if desired.

YIELD: makes four 10 ounce servings.
